1. Thinly slice the cucumber and place it in a bowl. Add vinegar, salt, and pepper, then set aside to pickle.
2. Peel and dice the potato, then boil in water until tender.
3. Finely dice the onion.
4. To make the jam, combine cranberries, orange peel, sugar, and orange juice in a saucepan. Cook until the berries soften and the mixture thickens, then blend until smooth.
5. In a large bowl, combine ground meat, diced onion, garlic powder, black pepper, breadcrumbs, and an egg. Mix well.
6. Form the mixture into small meatballs.
