A traditional Mexican dish consisting of slow-cooked, tender beef in a rich, flavorful chile-based stew. The meat is then served in crispy tortillas with melted cheese and a side of the consommé for dipping.

What you need

bunch fresh cilantro
head fresh garlic

tbsp black peppercorn

bunch radish

cup water

cup oaxaca cheese

lb chuck roast
Instructions
1. Sear beef chunks in a pot, then remove. In the same pot, add onions, garlic, and tomatoes. 2. Toast peppercorns, then add them with bay leaves and a cinnamon stick to a spice bag. 3. Return the beef to the pot, add the spice bag, and cover with water. 4. Soften the dried chiles in hot water. Blend the chiles with the cooked vegetables and some of the cooking liquid to create a sauce. 5. Strain the sauce back into the pot with the beef. Cover and simmer for several hours until the beef is tender. 6. Remove the beef and shred it. 7. Dip tortillas in the consommé, place on a hot pan, and top with cheese and the shredded beef. 8. Fold the tortilla and cook until crispy and the cheese has melted. 9. Garnish with chopped onion, cilantro, and sliced radish. 10. Serve with a side of the consommé for dipping and lime wedges.
