1. Prepare the salsa by adding chopped onion, a serrano pepper, tomatillos, cilantro, and lime juice to a blender. Blend until smooth. 2. Season the steak on both sides. Cook in a hot pan. 3. Add butter and fresh thyme to the pan and baste the steak as it cooks. 4. Once cooked to your liking, remove the steak from the pan, let it rest, and then slice it. 5. To make the tortillas, mix masa harina with water in a bowl to form a dough. 6. Roll the dough into small balls and flatten them using a tortilla press lined with parchment paper. 7. Cook the tortillas on a hot, dry skillet until lightly toasted on both sides. 8. Assemble the tacos by placing sliced steak on a warm tortilla. Top with diced tomatoes, diced onions, and fresh avocado. 9. Serve immediately.
